The "Associated Press Stylebook" tells you that the difference between "that" and "which" is "that" is used for things called "essential" clauses while "which" is used for "nonessential" clauses. The "Chicago Manual of Style" and gives the same basic advice, albeit they use the terms "restrictive" and "nonrestrictive" clauses.
